我最近去了一家位於台北市松山區的餐廳,名為鮨增田 Sushi Masuda。這是一家高級鮨店,客製套餐NT$12800非常滿意,而且侍酒服務也非常專業。除此之外,餐廳的環境也寬敞明亮,充滿了現代和風的木質調,大吊燈聯想到高雄晶英行館舞動的粒子。

我的餐點開始以一碗甲魚清湯暖胃,這是一個很好的開胃菜。接著,我品嚐了一道白身魚搭配安康魚肝慕斯,口感和味道都非常出色。接著,我還享用了一道口感綿密的鮪魚腦天手捲,這道菜真是化在口中。而餐廳的招牌菜魚翅蒸蛋,滋味更是讓人備受讚賞,蛋的口感滑潤。接下來,我嚐到了一道白燒鰻魚搭配醋飯、黃瓜絲、魚子醬的菜餚,這道菜展現了多重風味層次,非常讓人印象深刻。

其中一道令我印象深刻的菜餚是燒得入味的キンキ,這道菜的豐腴肉身包裹著輕盈風味醬燒,搭配著薑絲,讓我聯想到了過去在高橋餐廳的美食經驗。餐廳炸魚的火候也拿捏得宜,多汁燙口,香氣四溢。另外,第一貫剝皮魚佐魚肝也是上乘之作。這些壽司反射在黑色漆器上,立體的影像讓我無法自拔,忍不住得趕快咬下去。

在餐廳中,我品嚐到了今年最優秀的一貫寿司-コハダ,魚身緊緻,帶著勁道的酸味,搭配上米飯的顆粒感,絕對是極品!接下來,我又品嚐了一道穴子握寿司,這道菜給我留下了深刻的印象。市場上大多數人稱鰻魚為最佳,然而,在Sushi Masuda,細膩柔軟的穴子搭配熟成醬汁才是真正的江戶前精神。

整個晚餐過程中,我不僅品嚐了美味的料理,還連結到了我在下關念念不忘的割烹套餐。這一頓晚餐彌補了我無法親自品嚐美食的遺憾。小杉主廚最後獻上了一道特別的麵食,令我驚豔不已。

【English】Sushi Masuda – Exquisite Sushi Experience in a Luxurious Setting with Unforgettable Anago and Kinka!

I recently had the pleasure of dining at Sushi Masuda, a renowned restaurant located in the heart of Taipei City. From the moment I stepped foot into this luxurious sushi establishment, I was captivated by its elegant ambiance and impeccable service. The spacious and bright interior, with its modern and wooden decor, reminded me of the prestigious hotels in Kaohsiung.

Once seated, I embarked on a culinary journey like no other. I started my meal with a warming and flavorful bowl of kappa turtle soup, which served as a perfect appetizer. Next, I had the opportunity to savor a delicate dish of white fish paired with Anko fish liver mousse. The combination of textures and flavors was extraordinary.

The highlight of my dining experience was undoubtedly the toro temaki, a hand roll made with fatty tuna. As I took my first bite, the tuna melted in my mouth, leaving behind a rich and velvety sensation. Each morsel was packed with umami goodness, showcasing the masterful skills of the sushi chef.

One of the restaurant’s signature dishes, the steamed egg custard with fish fins, was a delightful sensory experience. The flavors were well-balanced, and the texture of the custard was smooth and creamy. The addition of rice vinegar, cucumber threads, and fish roe added multiple layers of taste, creating a dish that was truly memorable.

The chef’s mastery was further showcased in the perfectly grilled Kinmedai, or splendid alfonsino. The combination of its succulent flesh and the light, flavorful sauce transported me back to my culinary adventures in Takahashi. The fried fish was cooked to perfection, crispy on the outside, juicy and aromatic on the inside.

Another standout was the first strata fish, served with fish liver. It was a testament to the chef’s expertise and the pinnacle of culinary artistry. The sushi, presented on a black lacquerware, reflected a mesmerizing image in its two-dimensional form. It was a sight to behold, almost too beautiful to eat.

One of the most outstanding pieces of sushi I’ve had this year was the Kohada, or gizzard shad. The flesh was firm and packed with a delightful acidity that harmonized perfectly with the rice, providing a memorable gustatory experience. Another unforgettable moment was when I indulged in the anago nigiri, or grilled sea eel. While most places favor the ubiquitous unagi, the delicate and velvety anago paired with the aged sauce truly embodied the spirit of Edo-style sushi.

Throughout the meal, I couldn’t help but reminisce about a previous kaiseki experience I had in Shimogoshi. Sushi Masuda managed to deliver an extraordinary dining experience that assuaged the regret of not being able to taste those culinary delights firsthand. As a grand finale, Chef Kosugi presented a special noodle dish that left me utterly amazed.

In conclusion, Sushi Masuda is a top-tier sushi establishment that rivals the grandest I’ve encountered. The exquisitely crafted dishes and the mastery of culinary techniques were a testament to the chef’s dedication and artistry. The ambiance of the restaurant was impeccable, the dining experience was one of sheer elegance, and the flavors were unparalleled. Despite its unassuming appearance in photographs, the taste far exceeded my expectations. If you’re looking to experience the artistry of a sushi master, I highly recommend Sushi Masuda!
